What’s to Love About this Recipe?

If you love peanut butter and are looking for a healthy snack or quick breakfast, please make these!

This baked oatmeal recipe is quick and easy to make. After you fill the oatmeal cups, store them in the refrigerator for an instant, high protein snack or breakfast.

The peanut butter yogurt fluff is divine. Simply mix your favorite peanut butter powder (or prepared jarred peanut butter) with Greek yogurt and you’ve got a creamy filling that you will want to eat all by itself (which you should!). Add a spoon of instant vanilla pudding mix or honey for a touch of sweetness, or not.

Tips for making and storing Peanut Butter Oat Cups

Peanut butter oat cups use old fashioned oats which works best for a nice chewy texture, especially with filling.

An ice cream scooper works perfectly for filling the muffin tins with the oatmeal mixture. And, using the back of the scooper to press the mixture in the pan makes it quick and easy without messy hands. Up to you!

Powdered Peanut Butter?

This recipe uses powdered peanut butter in the baked oatmeal cups and yogurt fluff.

Powdered peanut butter is made from roasted peanuts that have been pressed to remove most of the oil and then ground into a fine powder. Some brands contain a little sugar and salt.

I like the versatility of the powdered peanut butter. Adding the powder to baked goods, oatmeal, yogurt, smoothies, sauces, creamy pies, and even a coating for meat is an easy way to add peanut butter flavor and extra protein. Try it out in my Peanut Butter Greek Yogurt Ice Cream Sandwiches.

In this recipe, we simply mix the powder with Greek yogurt for a super high protein filling. Please use prepared peanut butter if you prefer.

For the record, I love prepared peanut butter and always have a jar in my refrigerator.

Storing prepared oat cups and yogurt fluff.

I store the cups with the peanut butter fluff in the refrigerator for easy access! I like the texture of the oatmeal cups combined with the yogurt filling which gives the oats a chewy texture.
