Stovetop Pan Charred Broccoli Recipe Tips
Pan charring is all about creating that wonderful brown crust on the broccoli.
The best way to do that is to prepare the broccoli so that there is a flat surface on each piece of broccoli that allows for that charring to happen.
Preparing broccoli for charring.
- Rinse broccoli and cut the thick stem to the base of the crown.
- Cut each stalk away from the head of the broccoli.
- Slice each stalk in half lengthwise to create a flat side. For larger florets, cut in half again. You want each piece to be of similar size.
- If you have very small florets that cannot be cut in half, leave them whole and char them as is, or save them for another recipe.
- Once all of the florets are prepared, pat the broccoli completely dry with paper towels. The drier the broccoli, the better the caramelization and crust will be.

How to pan char broccoli.
- Preheat a large cast iron or heavy bottomed skillet over medium high heat for about 3 minutes.
- Add the patted dry broccoli to the heated pan in a single layer, flat side down. The single layer allows for pan searing, rather than steaming. You may need to cook in batches. Add a pinch or two of salt.
- Do not touch for at least 2-3 minutes. The broccoli is ready to flip when it turns bright green and develops deep golden-brown charred spots underneath. The edges should look caramelized and slightly crisp, but not burnt.
- Flip over using tongs, add a tablespoon of water to the pan and continue cooking another 3 minutes or until fork tender.
Key recipe take-aways.

- Create a flat surface for maximum char. Cutting the broccoli florets in half creates a flat side that makes direct contact with the hot pan, helping develop deep caramelization and smoky flavor.
- Arrange the broccoli in a single layer. Placing the broccoli flat-side down in a single layer allows it to char properly. Overcrowding the pan traps moisture and causes the broccoli to steam instead, which you don’t want right away.
- Dry the broccoli thoroughly. Moisture is the enemy of a good char. Pat the broccoli dry after washing to encourage browning and help create those delicious crispy edges.
