Why you will love this Italian Red Wine Vinaigrette recipe.

It just tastes so good.

What makes this vinaigrette taste so good? It’s all about balance. The red wine vinegar brings that classic tangy kick, while the honey smooths it out with just the right touch of sweetness.

Garlic adds a savory punch, and Italian seasoning ties it all together with a blend of herbs like oregano, basil, and thyme.

Then there’s the olive oil—it gives the dressing a rich, silky texture and helps all those bold flavors blend together perfectly. It’s simple, but every ingredient pulls its weight.

This recipe is the perfect vinaigrette for Mediterranean Tuna and Cannellini Bean Salad.

Italian red wine vinaigrette is easy and quick.

No special equipment needed. Add the ingredients to a jar with a lid, shake, and serve.

If you prefer, adding the dressing to a blender works well too.

A vinaigrette without Dijon mustard.

There is nothing wrong with Dijon mustard in a vinaigrette. I actually use it a lot. It is usually used as an emulsifier in vinaigrettes, but sometimes you don’t want the flavor of Dijon.

The emulsifier in this recipe is honey, which works well enough with a quick shake or in a blender.

A vinaigrette with many uses.

  • Salads. Fresh garden, pasta, or bean salads. Try it on Mediterranean Tuna and Cannellini Bean Salad.
  • Sandwiches. Drizzle on your favorite sub, sandwich, or wrap.
  • Roasted Vegetables. Zucchini, eggplant, asparagus, broccoli, and even potatoes.
  • Meats. Grilled meats such as chicken, steak, pork or cooked shrimp.
  • Grain Bowls. Add to your favorite grain bowls.

Vinaigrette basics.

The basic ratio for homemade vinaigrette recipes is three parts oil to one part vinegar. Though vinaigrette can be made to taste!

A good quality extra virgin olive oil is recommended for this recipe due to its flavor. I do not recommend other oils for this recipe.

When making vinaigrette, oil and vinegar (or other acidic ingredients like lemon juice) naturally separate, but by emulsifying them, you create a smooth and creamy dressing.

For emulsifying a homemade vinaigrette, a good quality Dijon mustard works wonders and adds so much flavor. Other emulsifiers include mayonnaise, honey, and maple syrup.

To successfully emulsify, it helps to start with room temperature ingredients. A blender works best, but a good whisking or shake in a jar works fine too.

Why does home made salad dressing solidify or separate in the refrigerator?

Olive oil, a common ingredient in salad dressings, contains monounsaturated fats that solidify when chilled.

Store-bought dressings often contain emulsifiers like xanthan gum, which help prevent this. For home made vinaigrette, here are a few tips:

  • Warm it Up: Simply take the dressing out of the fridge 15-20 minutes before using, or allow the container to sit in warm water. I’ve been known to microwave for a few seconds too.
  • Shake Well: Give the dressing a good shake to re-emulsify the oil and other ingredients.
  • Use an Emulsifier. As mentioned above, using an emulsifier, such as Dijon mustard, honey, maple syrup or mayonnaise helps. This recipe uses honey, which helps emulsify the vinaigrette.

  • 2-1/2 teaspoons slightly warm honey (see notes)

  • 1/2 teaspoon Italian seasoning

  • Pinch of salt and fresh cracked pepper to taste

Notes

  • Store in the refrigerator for up to a week.
  • The honey can be warmed by allowing the bottle to sit in very warm water for a few minutes.
  • You may need to allow the dressing to sit at room temperature before using to loosen up the vinaigrette. Or, place the jarred vinaigrette in warm water for a few minutes. Shake before using. See blog tips.
