This healthy apple pie baked oatmeal recipe is super easy and tastes just like warm apple pie.
Oatmeal, shredded apple and apple sauce make every bite of this baked oatmeal creamy and tender, but with a slightly chewy texture. The addition of cinnamon, vanilla, and just a little brown sugar add a desert-like flavor. The apple yogurt topping is perfect on top of the warm, baked oatmeal.
Refrigerate leftovers and reheat in the microwave or pan fry for a healthy breakfast all week.
What’s to love about this baked oatmeal recipe?
Besides tasting like apple pie, this recipe is easy to dump into one bowl, mix, and bake and smells divine when it is baking.
While you can cook this on the stove top, I prefer the baked oatmeal because it has a unique texture that’s soft and creamy with a tender chew.
Even better, is what you can do with leftovers.
- Portable breakfast on the go, just reheat slices in the microwave
- Slice and pan fry in a little butter
- Cut into chunks and layer with yogurt or pudding, walnuts, raisins, etc.
The apple yogurt topping is easy too. Just stir together yogurt, applesauce, cinnamon, and your favorite sweetener.
How is apple pie baked oatmeal made?
Combine all the ingredients, dump into a baking dish and bake–you are done!
Most of the work comes from shredding one apple. That’s it.
Recipe tips
Old fashioned or rolled oats are my go-to for most recipes. The oats cook up intact which allows for some chewiness and texture that is perfect for this recipe.
I do not recommend steel cut oats for this recipe as they won’t fully cook. Though, I love steel cut oats when cooked on the stove top or in a crock pot.
Instant oats will not leave you with the texture you are looking for in this recipe. While slightly more processed, they are perfect for a quick breakfast on the go and work well in overnight oats.
Salt really brings out flavor, especially in dishes with a sweet element. Please add it when cooking oatmeal.
So how do I know when baked oatmeal is done?
Look for oats that are set. If it wiggles in the middle or seems soupy, continue cooking.
Once you take the baked oatmeal out of the oven, leave it sit for about ten minutes to give the dish time to set.
