Baked sweet potato slices topped with cranberry sauce and goat cheese and finished under the broiler just until the cheese is golden brown. Serve with a sprinkle of toasted walnuts and crispy bacon. A great combination of creamy, crunchy, sweet, and salty.
What’s to love about these baked sweet potato slices?
A twist on oven baked sweet potatoes that probably involves ingredients you have on hand during the Fall season and the holidays.
This recipe makes for a fun appetizer, side dish, or even a snack.
The sweet potato slices themselves are super flavorful with just the right amount of savory seasoning to balance the sweetness. The butter adds a rich, nutty flavor and promotes browning.
Topped with whole berry cranberry sauce, goat cheese, toasted walnuts, and a sprinkle of bacon! The flavors just go together!
How to make this recipe.

For this recipe, I prefer thicker, round slices of about 3/4″ to 1″ to hold the luscious toppings.
Usually I would keep the peel on the potatoes, but you want to be able to sink your fork into these and scoop up a bite without having to deal with the peel.
Toss with butter, olive oil, and seasonings and roast on a sheet pan in a single layer.
After about 25 minutes, with a flip in between, take them out and top with cranberry sauce and goat cheese. I suggest whole berry cranberry sauce, preferably home made, but the canned whole berry cranberry sauce works great too.
The sweet potato slices go back in the oven under the broiler to caramelize the cranberry sauce and allow the goat cheese to become golden brown.
Remove from the oven and top with toasted walnuts and chopped bacon.
Do you peel sweet potatoes?
You can eat sweet potato skin. It will save you prep time and there are nutritional benefits to leaving the peel on. For this recipe, I prefer to remove the peel, but you do not have to.
Creating your own version of baked sweet potatoes slices.
This is fun. As far as the cheese, feta, brie, or cheddar would go well with the cranberry sauce.
Instead of walnuts, use pecans, pumpkin seeds, or pistachios.
You can swap out the bacon for crispy prosciutto or pancetta, or even sausage.
Fresh chopped parsley or scallions would add a fresh bite at the very end.
