Toasty almonds and parmesan cheese create a crunchy, flavorful coating on these oven roasted almond parmesan crusted cauliflower steaks.

No bread crumbs, so keto fans, these are great!

Just three easy steps to the best cauliflower steak you will ever eat!

What’s to love about this recipe?

Cooking the sliced cauliflower steaks in the microwave prior to roasting ensures a slightly quicker cooking time. We do not want a burnt crust and partially raw cauliflower!

After the microwave, the cauliflower steaks get a good rub down with a seasoned olive oil mixture, and then coated on one side with the almond parmesan coating.

Baking for about 15-20 minutes is all you need for a crunchy coated, cauliflower steak.

My fiancé, who won’t touch cauliflower, loved these!

Helpful tips for roasted almond parmesan crusted cauliflower steaks

Preparing the cauliflower steaks

Remove the outer green leaves from the stem end of the cauliflower.

Rinse the cauliflower under cold water and pat dry.

Trim the stem end if needed so that the cauliflower sits flat on the cutting board for stability.

Place the cauliflower stem side down on the cutting board and carefully make one cut through the center of the cauliflower to divide it in half.

Finally, cut each half into slices, about 3/4 inch thick. You will get about 2-4 steaks per cauliflower, depending on the size of the cauliflower.

Pans Can Make a Difference

Dark sheet pans works best if you want the crunch. Dark pans absorb more heat and promote browning. I also prefer to use the bottom rack of the oven for this recipe.

If you do not have a dark sheet pan, use whatever you have. Make sure the steaks have enough room between them.

Preparing the almond parmesan coating

I like to use a food processor to finely chop the nuts. Using the pulse feature ensures the almonds keep some texture but are not too large. You want texture, but also want the almonds to stick to the cauliflower.

Please use “real” Parmesan cheese that you would buy in the cheese section of your grocery store. The bottled grated cheese is called “Parmesan cheese” but unless you’re grating cheese from a wedge of Parmigiano Reggiano, the cheese you are eating might not be real Parmesan cheese. It just tastes so much better and is key to this recipe.

Ingredients

  • 2 l arge heads of cauliflower, cut into 3/4″ steaks (see tips)

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp . salt

  • 1/2 tsp . garlic powder

  • 1 tsp . onion powder

  • 1/2 tsp . paprika (smoked or regular)

  • Almond Parmesan coating
  • 3/4 cup Parmesan cheese (finely grated)

  • 3/4 cup finely chopped almonds (see tip above)

  • Garnish (optional)
  • fresh parsley

  • additional almonds

  • Fried egg

Directions

  • Preheat oven to 425 degrees and prepare baking sheet with cooking spray or thin coating of olive oil.
  • Wash cauliflower under running water and remove leaves from underneath. Slice cauliflower in half through the stem at the bottom. Slice each half into 3/4″ steaks. You may get 2-4 steaks per cauliflower.
  • Place prepared steaks in a microwave safe dish and microwave for 2-1/2 minutes. Let cool for a few minutes.
  • Prepare seasoned olive oil. Combine olive oil, salt, garlic and onion powder, paprika and thyme on a small plate, stir to combine.
  • Prepare coating mixture. Combine the ground almonds and finely grated parmesan cheese on a large plate.
  • Using a pastry brush or the back of a spoon, cover the cooled steaks with seasoned olive oil mixture on one side.
  • Place the oiled/crusted side of the cauliflower steaks onto the coating mixture, pressing firmly.
  • Place cauliflower steaks on the pan, crust side down. Brush the tops of the steaks with oil and seasoning mixture.
  • Bake at 425F on lower shelf of oven for 12-15 minutes. Wait at least 12 minutes before moving or flipping to give the coating a chance to form a crust. Flip them over and cook for another 5 minutes.

Notes

  • Leftover florets can be tossed with olive oil and seasoning and roasted with the steaks or save for another meal.
  • Store leftover steaks in the refrigerator. Reheat in the oven at 350F for about 10 minutes or microwave for 1 minute to heat through.
  • Any leftovers are great for breakfast the next day with a fried egg on top! Yummm!
